Ingredients

  • 1 lb smoked sausage
  • 16 oz sauerkraut
  • 1 large yellow onion
  • 4 medium russet potatoes
  • 2 tbsp olive oil
  • 2 large garlic cloves
  • 1 tsp caraway seeds
  • 1 cup chicken broth
  • 0.5 cup sour cream
  • 1 cup shredded Swiss cheese
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp fresh parsley

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set aside.

Step 2

Slice the smoked sausage into 1/4-inch thick rounds. Peel and thinly slice the yellow onion. Peel the russet potatoes and slice them into 1/4-inch thick rounds.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the sliced sausage and cook for 5-6 minutes, stirring occasionally, until browned. Remove the sausage from the skillet and set aside.

Step 4

In the same skillet, add the sliced onion and minced garlic. Sauté for 3-4 minutes, or until the onion is soft and translucent.

Add the sauerkraut (drained), caraway seeds, salt, and pepper to the skillet. Stir to combine and cook for an additional 3-4 minutes.

Remove the foil and spread the sour cream evenly over the top of the casserole. Sprinkle the shredded Swiss cheese over the sour cream.

Return the casserole to the oven and bake uncovered for an additional 10 minutes, or until the cheese is melted and bubbly.
