Ingredients

  • 12 ounces smoked sausage
  • 12 ounces penne pasta
  • 2 tablespoons olive oil
  • 1 medium, diced yellow onion
  • 1 medium, sliced red bell pepper
  • 1 medium, sliced into half-moons zucchini
  • 1.5 cups grape tomatoes
  • 3 cloves, minced garlic
  • 1 teaspoon Italian seasoning
  • 0.25 teaspoons red pepper flakes
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.5 cups, grated Parmesan cheese
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions. Reserve 1/2 cup of pasta water, then drain and set the pasta aside.

Step 2

While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Slice the smoked sausage into 1/4-inch rounds and add them to the skillet. Cook for 3–5 minutes, stirring occasionally, until browned. Remove the sausage from the skillet and set aside.

Step 3

In the same skillet, add the remaining tablespoon of olive oil. Reduce the heat to medium, then add the diced onion and sliced red bell pepper. Sauté for 3–4 minutes, until they begin to soften.

Step 4

Add the zucchini to the skillet and cook for another 3 minutes, stirring occasionally. Stir in the grape tomatoes, minced garlic, Italian seasoning, red pepper flakes, salt, and black pepper. Cook for 2–3 minutes, until the tomatoes start to soften and release their juices.

Step 5

Return the cooked smoked sausage to the skillet along with the drained pasta. Toss everything together, adding a splash of the reserved pasta water to loosen the sauce if needed.

Step 6

Remove the skillet from the heat and stir in the grated Parmesan cheese and fresh parsley. Toss until the cheese is melted and everything is coated evenly.

Step 7

Serve hot, garnished with additional Parmesan and parsley if desired.
