  • 12 oz Smoked sausage
  • 3 large Russet potatoes

  • 2 tbsp Unsalted butter
  • 1 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 tsp Dried thyme
  • 2 tbsp Fresh parsley (optional, for garnish)

Directions

Step 1

Slice the smoked sausage into thin rounds and set aside.

Step 2

Peel and dice the potatoes into bite-sized cubes. Dice the carrot, celery, and onion, and mince the garlic.

Step 3

Heat a large pot or Dutch oven over medium heat and add the olive oil. Add the sliced smoked sausage and cook for 3-4 minutes until lightly browned. Remove the sausage and set aside.

In the same pot, melt the butter over medium heat. Add the diced onion, carrot, and celery. Sauté for 5-6 minutes until the vegetables soften.
