  • 14 oz smoked sausage
  • 1.5 lbs baby potatoes

  • 1 tsp smoked paprika
  • 0.5 tsp dried thyme
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 cup water or chicken broth

Directions

Step 1

Wash and scrub the baby potatoes. Cut them into bite-sized quarters.

Step 2

Trim the ends of the green beans and cut them into 2-inch pieces. Rinse well and set aside.

Step 3

Slice the smoked sausage into thin rounds, about 1/4-inch thick.

Step 4

Peel and dice the yellow onion into small pieces.

Heat a large skillet over medium-high heat. Add 1 tablespoon of olive oil and the sliced smoked sausage. Cook for 3–4 minutes, stirring occasionally, until the sausage is browned on both sides. Remove the sausage from the skillet and set aside.
