Slice the smoked sausage into rounds about 1 cm thick and set aside.
Heat 1 tablespoon of olive oil in a large Dutch oven or oven-safe pot over medium heat. Add the sliced sausage and cook until browned on both sides. Remove and set aside.
Add the remaining olive oil to the pot, followed by the onion, carrots, and celery. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are softened.
Add the minced garlic and cook for an additional minute, until fragrant.
Drain and rinse the canned white beans. Add them to the pot along with the diced tomatoes (with juice) and the browned sausage.
Pour in the chicken broth, add the thyme sprigs and bay leaf, and season with salt and black pepper. Stir to combine.
Bring the mixture to a simmer, then lower the heat, cover, and cook for 30 minutes, stirring occasionally to prevent sticking.
Preheat the oven to 180°C (350°F).
In a small bowl, mix the breadcrumbs with melted butter and a tablespoon of parsley. Sprinkle the breadcrumb mixture evenly over the top of the cassoulet.
Transfer the pot to the oven (ensure your pot is oven-safe) and bake uncovered for 20 minutes, or until the topping is golden and crispy.
Remove the pot from the oven, discard the thyme sprigs and bay leaf, and garnish with the remaining chopped parsley.
Serve the cassoulet hot with crusty bread or a side salad for a complete meal.
