Ingredients

  • 400 grams smoked sausage
  • 2 tablespoons olive oil
  • 1 large yellow onion
  • 3 units garlic cloves
  • 2 medium carrots
  • 2 units celery stalks
  • 500 grams baby potatoes
  • 400 grams can of diced tomatoes
  • 250 milliliters chicken stock
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 50 grams Parmesan cheese
  • 2 tablespoons fresh parsley

Directions

Step 1

Preheat your oven to 190°C (375°F).

Step 2

Slice the smoked sausage into 1-cm (½-inch) rounds. Set aside.

Step 3

Heat olive oil in a large ovenproof skillet or casserole dish over medium heat.

Step 4

Dice the onion and mince the garlic, then add them to the skillet. Sauté for 3-4 minutes until fragrant and soft.

Peel and slice the carrots, and chop the celery into small pieces. Add these to the skillet and cook for another 5 minutes.

Halve the baby potatoes and add them to the skillet, stirring well to coat everything in the oil.
