Ingredients

  • 2 tablespoons olive oil
  • 12 ounces smoked sausage
  • 1 medium yellow onion
  • 2 medium carrots
  • 2 celery stalks
  • 3 garlic cloves
  • 6 cups chicken broth
  • 2 cans cannellini beans, drained and rinsed
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 2 cups kale, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Slice the smoked sausage into rounds and cook in the pot until browned, about 4-5 minutes. Remove the sausage and set aside.

Step 3

Dice the onion, carrots, and celery, and mince the garlic.

Step 4

Add the onion, carrots, and celery to the pot, and sauté for 5-6 minutes, until softened.

Step 5

Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

Step 6

Pour in the chicken broth, and add the cannellini beans, bay leaf, and dried thyme. Bring to a gentle boil.

Step 7

Reduce the heat to a simmer and return the sausage to the pot.

Step 8

Add the chopped kale to the soup and stir. Allow it to simmer for 15 minutes.

Step 9

Season with salt and black pepper to taste, removing the bay leaf before serving.

Step 10

Ladle the soup into bowls, garnish with fresh parsley, and serve warm with crusty bread, if desired.
