  • 15 ounces cannellini beans (canned, drained, and rinsed)
  • 15 ounces black beans (canned, drained, and rinsed)
  • 14 ounces diced tomatoes (canned, with juice)
  • 4 cups chicken broth
  • 2 tablespoons tomato paste
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh parsley (chopped for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Slice the smoked sausage into 1/4-inch rounds and add to the pot. Cook for 3-4 minutes until browned, then remove with a slotted spoon and set aside.
