  • 3 minced garlic cloves
  • 1 cup dried lentils
  • 6 cups chicken broth
  • 1 14.5-ounce can diced tomatoes
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons, chopped (optional) fresh parsley

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium heat.

Step 2

Slice the smoked sausage into rounds or half-moons and add them to the pot. Cook for 5-7 minutes, stirring occasionally, until the sausage is browned. Use a slotted spoon to remove the sausage and set it aside.

Step 3

In the same pot, add the diced onion, carrots, and celery. Sauté for 5 minutes, stirring occasionally, until the vegetables begin to soften.

Add the minced garlic and cook for an additional 1 minute, until fragrant.

Rinse the dried lentils under cold water and drain.
