Ingredients

  • 1 pound smoked sausage
  • 1 pound green beans
  • 1 pound baby potatoes

  • 3 pieces garlic cloves
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Rinse the green beans, trim off the ends, and cut them into 2-inch pieces.

Step 2

Rinse and halve the baby potatoes. For larger potatoes, quarter them.

Step 3

Slice the smoked sausage into 1/2-inch thick rounds.

Step 4

Peel and dice the yellow onion. Mince the garlic cloves.

Step 5

Heat the olive oil in a large pot or Dutch oven over medium heat.

Add the sausage slices to the pot and cook until browned on both sides, about 5 minutes. Remove the sausage and set aside.
