Ingredients

  • 12 sheets Rice paper wrappers
  • 200 grams Smoked salmon
  • 1 medium Cucumber
  • 1 medium Carrot
  • 1 large Avocado
  • 12 leaves Fresh mint leaves
  • 12 sprigs Fresh cilantro
  • 100 grams Rice vermicelli noodles
  • 3 tablespoons Soy sauce
  • 1 tablespoon Lime juice
  • 1 teaspoon Honey
  • 0.25 teaspoon Chili flakes
  • 1 cup Water

Directions

Step 1

Prepare the rice vermicelli noodles according to the package instructions. Typically, this involves soaking them in hot water for 5-7 minutes until softened. Drain and rinse with cold water, then set aside.

Step 2

Julienne the cucumber and carrot into thin matchstick-sized pieces. Slice the avocado into thin strips.

Step 3

Set up your workstation with a large bowl of warm water, a clean cutting board, and all the prepared ingredients.

Step 4

Working one at a time, dip a rice paper wrapper into the warm water for about 10-15 seconds until it starts to soften. Place the softened wrapper on the cutting board.

Step 5

Arrange a small portion of rice vermicelli noodles, a slice or two of smoked salmon, a few cucumber and carrot sticks, a slice of avocado, one mint leaf, and one sprig of cilantro in the center of the wrapper.
