Ingredients

  • 400 grams penne pasta
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 cup heavy cream
  • 100 grams cream cheese
  • 200 grams smoked salmon, chopped
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh dill, chopped
  • 50 grams parmesan cheese, grated
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1/4 cup of pasta water.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Step 3

Lower the heat to medium-low and add the heavy cream and cream cheese to the skillet. Stir continuously until the cream cheese is fully melted and the sauce is smooth.

Step 4

Mix in the chopped smoked salmon and cook for 2 minutes to heat through.

Step 5

Add the lemon juice, fresh dill, and grated Parmesan cheese to the sauce. Stir until well combined.

Step 6

Season with salt and black pepper to taste. If the sauce is too thick, use the reserved pasta water, a tablespoon at a time, to thin it out.

Step 7

Toss the cooked penne pasta in the sauce until evenly coated.

Step 8

Serve immediately, garnished with additional fresh dill and grated Parmesan if desired.
