  • 1.5 cups Arborio rice
  • 6 oz Smoked salmon
  • 2 tbsp Unsalted butter
  • 1 tbsp Olive oil
  • 1 medium Yellow onion, finely diced
  • 2 cloves Garlic, minced
  • 4 cups Chicken or vegetable stock
  • 0.5 cups Dry white wine
  • 1 tbsp Lemon zest
  • 2 tbsp Fresh lemon juice
  • 0.75 cups Grated Parmesan cheese
  • 2 tbsp Heavy cream
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper, freshly ground
  • 2 tbsp Fresh dill, chopped (optional garnish)

Directions

Step 1

Start by preparing all your ingredients: finely dice the onion, mince the garlic, and zest and juice one lemon.

Step 2

Warm the chicken or vegetable stock in a saucepan over low heat. Keep it warm throughout the cooking process.

Step 3

In a large saucepan or skillet, heat the butter and olive oil over medium heat. Add the diced onion and garlic, and sauté for 3-4 minutes until softened and translucent.

Add the Arborio rice to the pan and stir well to coat the grains with the butter and oil. Toast the rice for about 2 minutes, stirring frequently, until slightly golden and aromatic.
