Ingredients

  • 4 large Russet potatoes
  • 1 medium Yellow onion
  • 2 large Eggs
  • 0.25 cup All-purpose flour
  • 1.5 teaspoons Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Vegetable oil
  • 1 cup Sour cream
  • 2 tablespoons, chopped Fresh dill
  • 1 teaspoon Lemon juice
  • 8 ounces Smoked salmon
  • 2 tablespoons, chopped (optional garnish) Chives

Directions

Step 1

Peel the potatoes and grate them using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out as much excess liquid as possible.

Step 2

Grate the onion and combine it with the grated potatoes in a large mixing bowl.

Step 3

Add the eggs, flour, salt, and black pepper to the potato-onion mixture. Mix well until fully combined.

Step 4

Heat the vegetable oil in a large skillet over medium-high heat. Once hot, drop 2–3 tablespoons of the potato mixture into the skillet and flatten into a pancake shape with a spatula. Cook for 3-4 minutes on each side, or until golden brown and crispy. Transfer cooked latkes to a plate lined with paper towels to drain excess oil. Repeat with the remaining mixture.

Step 5

In a small bowl, whisk together the sour cream, fresh dill, and lemon juice. This will be your dill sauce.

Step 6

Place the latkes on a serving platter. Top each latke with a dollop of the dill sauce, a slice of smoked salmon, and a sprinkle of chopped chives (if desired).
