Ingredients

  • 300 grams Penne pasta
  • 150 grams Smoked salmon
  • 1 medium-sized Cucumber
  • 2 tablespoons Fresh dill
  • 0.5 Red onion
  • 120 grams Greek yogurt
  • 1 tablespoon Lemon juice
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente, usually about 8-10 minutes. Drain the pasta and rinse under cold water to cool it down. Set aside.

Step 2

While the pasta cooks, dice the cucumber into small cubes and finely chop the fresh dill. Thinly slice the red onion and cut the smoked salmon into bite-sized strips.

Step 3

In a small mixing bowl, whisk together the Greek yogurt, lemon juice, olive oil, salt, and black pepper to make the dressing. Taste and adjust seasoning if needed.

Step 4

In a large mixing bowl, combine the cooked and cooled pasta, cucumber, red onion, and smoked salmon. Pour the dressing over the salad and toss gently until everything is evenly coated.

Step 5

Sprinkle the chopped dill over the salad and give it one final mix. Transfer the salad to a serving dish or chill in the refrigerator for 20-30 minutes if you prefer it cold.

Step 6

Serve the smoked salmon dill and cucumber pasta salad as a light main dish or a side. Enjoy!
