Ingredients

  • 300 grams Cheese tortellini
  • 150 grams Smoked salmon
  • 200 grams Cherry tomatoes
  • 1 medium Cucumber
  • 0.5 medium Red onion
  • 100 grams Mixed salad greens
  • 2 tablespoons Lemon juice
  • 3 tablespoons Olive oil
  • 1 tablespoon Dill
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the cheese tortellini according to the package directions. Drain and rinse with cold water to cool them down quickly. Set aside.

While the tortellini is cooking, slice the smoked salmon into bite-sized pieces and set aside.
