Ingredients

  • 400 g linguine pasta
  • 200 g smoked salmon
  • 150 g baby spinach leaves
  • 200 ml heavy cream
  • 2 garlic cloves
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • 50 g grated Parmesan cheese
  • 2 tbsp lemon juice
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp parsley (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the linguine pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta cooking water, then drain the pasta and set aside.

Step 2

While the pasta is cooking, mince the garlic cloves and slice the smoked salmon into bite-sized pieces.

Step 3

In a large skillet, heat the olive oil and butter over medium heat until melted. Add the minced garlic and sauté for 1-2 minutes, or until fragrant.

Reduce the heat to low and pour in the heavy cream. Stir to combine and let it gently simmer for 2-3 minutes.
