Ingredients

  • 250 grams Penne or bow-tie pasta
  • 150 grams Smoked salmon
  • 200 grams Cherry tomatoes
  • 1 Cucumber
  • 0.5 Red onion
  • 2 tablespoons Fresh dill
  • 100 grams Baby spinach
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Fill a large pot with water, add a pinch of salt, and bring it to a boil. Cook the pasta according to package instructions until al dente, usually about 8-10 minutes. Drain and rinse under cold water to stop the cooking process, then set aside.

Step 2

While the pasta cooks, slice the cherry tomatoes in half, dice the cucumber, thinly slice the red onion, and roughly chop the baby spinach if the leaves are large.

Step 3

Cut the smoked salmon into bite-sized pieces and finely chop the fresh dill.

Step 4

In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and black pepper to create the dressing.

Step 5

In a large mixing bowl, combine the cooked and cooled pasta, cherry tomatoes, cucumber, red onion, spinach, smoked salmon, and dill.

Step 6

Drizzle the dressing over the pasta salad and gently toss until all the ingredients are evenly coated.

Step 7

Taste and adjust the seasoning with more salt or pepper, if needed.

Step 8

Serve the pasta salad immediately or refrigerate for 1 hour to allow the flavors to blend. It can be served chilled or at room temperature.
