Ingredients

  • 100 grams all-purpose flour
  • 50 grams buckwheat flour
  • 1 teaspoon instant yeast
  • 1 teaspoon granulated sugar
  • 200 milliliters whole milk
  • 30 grams unsalted butter, melted
  • 1 large egg
  • 1 teaspoon salt
  • 200 grams smoked salmon
  • 150 grams crème fraîche
  • 10 grams fresh dill, chopped
  • 1 teaspoon lemon juice
  • 2 tablespoons olive oil or butter for frying

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, buckwheat flour, instant yeast, sugar, and salt.

Gently warm the milk until lukewarm but not hot (about 40°C or 100°F). Add the melted butter and egg to the milk and whisk together.
