Directions

Step 1

Preheat your smoker or grill to 225°F (107°C) and prepare it for indirect heat smoking. Add your choice of wood chips (apple, hickory, or maple wood work great).

Pat the pork chops dry with paper towels and evenly coat them with olive oil. Sprinkle both sides with smoked paprika, salt, black pepper, and garlic powder, rubbing it in gently.
