Ingredients

  • 2 pieces smoked mackerel fillets
  • 200 grams rice noodles
  • 1 medium cucumber
  • 20 grams fresh cilantro
  • 20 grams fresh mint leaves
  • 3 pieces scallions (green onions)
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon sesame oil
  • 0.5 teaspoons chili flakes
  • 1 tablespoon toasted sesame seeds
  • 0.25 teaspoons salt
  • 1000 milliliters water

Directions

Step 1

Bring 1000 milliliters of water to a boil in a large pot. Add the rice noodles and cook according to package instructions, usually around 6-8 minutes. Once cooked, drain the noodles and rinse them under cold water to stop further cooking. Set aside.

Step 2

While the noodles are cooking, prepare the cucumber by slicing it lengthwise and removing the seeds with a spoon. Then, julienne (cut into thin strips) the cucumber and set aside.

Trim and thinly slice the scallions (green onions). Roughly chop the fresh cilantro and mint leaves. Set these aside for later.
