Ingredients

  • 2 pieces Smoked chicken breast
  • 12 ounces Pasta (fettuccine or penne)
  • 1 cup Marinated artichoke hearts (drained and chopped)
  • 1.5 cups Heavy cream
  • 1 cup Grated Parmesan cheese
  • 3 cloves Garlic cloves (minced)
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 0.5 teaspoons Crushed red pepper flakes (optional)
  • 0 to taste Salt
  • 0 to taste Ground black pepper
  • 2 tablespoons Fresh parsley (chopped for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set the pasta aside.

Step 2

While the pasta is cooking, heat the olive oil and butter in a large skillet over medium heat.

Step 3

Add the minced garlic to the skillet and sauté for 1-2 minutes, or until fragrant, being careful not to burn it.

Step 4

Add the heavy cream to the skillet and bring it to a gentle simmer. Stir in the grated Parmesan cheese and continue to stir until the cheese is completely melted and the sauce is smooth.

Step 5

Stir in the marinated artichoke hearts and season the sauce with salt, ground black pepper, and crushed red pepper flakes (if using). Allow the sauce to simmer gently for 5-6 minutes, stirring occasionally.

Step 6

Slice the smoked chicken breasts into thin strips or bite-sized pieces. Add the chicken to the skillet and stir to combine, allowing it to heat through.

Step 7

Add the cooked pasta to the skillet and toss to coat evenly in the sauce. If the sauce is too thick, add the reserved pasta water a few tablespoons at a time until the desired consistency is reached.

Step 8

Taste and adjust the seasoning with more salt and pepper, if needed.

Step 9

Plate the pasta and garnish with chopped fresh parsley. Serve immediately.
