  • 1 tablespoon olive oil
  • 2 tablespoons chopped parsley (optional, for garnish)

Directions

Step 1

Peel and dice the sweet potatoes into 1/2-inch cubes. Finely chop the yellow onion, celery, and carrots. Mince the garlic.
