Ingredients

  • 1 pound ground beef
  • 8 ounces andouille sausage, sliced
  • 1 tablespoon smoked paprika
  • 2 tablespoons Cajun seasoning
  • 1 medium yellow onion, diced
  • 1 medium bell pepper, diced (any color)
  • 4 cloves garlic, minced
  • 14 ounces fire-roasted diced tomatoes, with juices
  • 15 ounces kidney beans, drained and rinsed
  • 15 ounces black beans, drained and rinsed
  • 2 tablespoons tomato paste
  • 2 cups beef broth
  • 2 peppers chipotle peppers in adobo sauce, minced
  • 1 bay leaf
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoons ground black pepper
  • 2 green onions, sliced (optional, for garnish)
  • 0.5 cup shredded cheddar cheese (optional, for garnish)

Directions

Step 1

Heat a large, heavy-bottomed pot or Dutch oven over medium-high heat. Add the olive oil.

Step 2

Once the oil is hot, add the ground beef and sliced andouille sausage. Cook until browned, breaking up the ground beef with a spoon, about 5-7 minutes. Drain any excess fat if necessary.

Step 3

Stir in the diced onion, bell pepper, and garlic. Cook for 3-4 minutes, until the vegetables are softened.

Step 4

Add the smoked paprika, Cajun seasoning, and tomato paste to the pot. Stir well to coat the meat and vegetables evenly with the spices and tomato paste. Cook for 1-2 minutes to enhance the flavors.

Step 5

Pour in the fire-roasted diced tomatoes (with their juices), beef broth, and minced chipotle peppers in adobo sauce. Stir to combine.

Step 6

Add the kidney beans, black beans, and bay leaf. Stir everything together. Season with salt and black pepper.

Step 7

Bring the chili to a gentle boil, then reduce the heat to low. Cover and simmer for 45 minutes, stirring occasionally to prevent sticking.

Step 8

Taste and adjust seasoning with additional Cajun seasoning, salt, or pepper, if needed.

Step 9

Remove the bay leaf and serve hot in bowls. Garnish with sliced green onions and shredded cheddar cheese, if desired.
