Ingredients

  • 200 g smoked bacon
  • 2 tbsp olive oil
  • 1 large, diced onion

  • 3 minced garlic cloves
  • 200 g dried lentils
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 large bay leaf
  • 1 liter chicken or vegetable stock
  • 2 tbsp tomato paste
  • 0 to taste salt
  • 0 to taste black pepper
  • 2 tbsp, chopped fresh parsley

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the smoked bacon and cook until crisp, about 5-7 minutes. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pot.

Add the diced onion, carrots, and celery to the pot, and sauté for 5-7 minutes until softened.

Stir in the minced garlic, smoked paprika, and ground cumin. Cook for 1 minute until fragrant.
