Rinse the split peas under cold water in a fine mesh sieve and pick through them to remove any debris or stones. Set aside.
In a large soup pot or Dutch oven, heat the olive oil over medium heat.
Add the diced onion, carrots, and celery, and sauté for 5 minutes until they begin to soften.
Stir in the minced garlic and cook for 1 minute longer, being careful not to burn it.
