Ingredients

  • 4 large Ripe tomatoes
  • 1 loaf Rustic baguette
  • 3 tablespoons Extra virgin olive oil
  • 2 cloves Garlic
  • 10 leaves Fresh basil leaves
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Freshly ground black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the baguette into approximately 1/2-inch thick slices on a slight diagonal. You should have around 12 slices.

Step 3

Place the baguette slices in a single layer on a baking sheet. Toast them in the preheated oven for about 5-7 minutes until they are golden brown and slightly crispy. Remove from the oven and set aside.

Step 4

While the bread is toasting, cut the tomatoes in half and use a box grater to grate the flesh into a bowl, discarding the skins. Stir in 1 tablespoon of the extra virgin olive oil, salt, and black pepper.
