  • 6 slices whole grain sandwich bread
  • 1 cup baby spinach leaves
  • 1 whole tomato (sliced)
  • 0.25 cup red onion (thinly sliced)
  • 2 tablespoons vegan mayo (optional)

Directions

Step 1

In a medium bowl, combine the white beans, avocado, lemon juice, olive oil, garlic powder, salt, and pepper.

Use a fork to mash the mixture until mostly smooth but still slightly chunky. Set aside.
