Ingredients

  • 2 pounds Yukon Gold potatoes
  • 4 cups Broccoli florets
  • 1 teaspoon Salt
  • 2 tablespoons Olive oil
  • 4 tablespoons Butter
  • 1 cup Milk
  • 1 teaspoon Garlic powder
  • 2 cups Sharp cheddar cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Paprika (optional)
  • 2 tablespoons Fresh parsley, chopped (optional garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel and cut the Yukon Gold potatoes into large chunks. Place them in a large pot and cover with water. Add 1 teaspoon of salt and bring to a boil.

Cook the potatoes for 15–20 minutes, or until they are fork-tender. Drain the water and return the potatoes to the pot.

Step 4

While the potatoes are cooking, toss the broccoli florets with 1 tablespoon of olive oil and a pinch of salt. Spread them out on a baking sheet and roast in the preheated oven for 15 minutes, or until slightly charred and tender.

Mash the cooked potatoes using a potato masher or a fork. Mix in the butter, milk, garlic powder, and black pepper. Adjust seasoning to taste.

Repeat the layers with the remaining mashed potatoes, roasted broccoli, and cheddar cheese.
