Ingredients

  • 4 pieces Green plantains
  • 6 pieces Garlic cloves
  • 1 cup Pork cracklings or cooked bacon (crumbled)
  • 2 cups Olive oil or vegetable oil (for frying)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Chicken or vegetable broth (optional for moistening)
  • 1 tablespoon Fresh cilantro (optional, for garnish)

Directions

Step 1

Peel the plantains by cutting off both ends and running a knife along the ridges to remove the skin. Slice the plantains into 1-inch thick rounds.

Step 2

Heat the oil in a deep skillet or frying pan over medium heat until it reaches 350°F (175°C).

Step 3

Fry the plantain slices in batches, cooking for 3-4 minutes per side or until golden and slightly tender. Remove with a slotted spoon and let drain on paper towels.

Step 4

Using a mortar and pestle (or a sturdy mixing bowl and the back of a wooden spoon), mash the garlic cloves with the salt until a coarse paste forms.

Step 5

Add the fried plantain slices to the garlic paste a few at a time, mashing them lightly to combine. Alternate adding the plantains and pork cracklings (or bacon), mashing until all ingredients are incorporated but still slightly chunky.

Step 6

If the mixture feels too dry, mix in 1-2 tablespoons of broth to moisten the mofongo to your desired consistency.

Step 7

Shape the mofongo into individual mounds or serve spooned directly onto plates.

Step 8

Garnish with a sprinkle of fresh cilantro if desired and serve warm alongside your favorite protein or broth on the side.
