Ingredients

  • 2 lbs Yukon Gold potatoes
  • 4 tbsp Unsalted butter
  • 6 oz Cream cheese
  • 0.5 cup Heavy cream
  • 2 cloves Garlic cloves, minced
  • 1.5 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Chives, finely chopped
  • 8 cups Water

Directions

Step 1

Peel the Yukon Gold potatoes and cut them into evenly sized chunks, about 2 inches each.

Step 2

Place the potato chunks into a large pot and cover them with 8 cups of water. Add 1 teaspoon of salt to the water.

Step 3

Bring the pot to a boil over medium-high heat. Once boiling, reduce the heat to medium and simmer the potatoes for 15-20 minutes or until they are fork-tender.

While the potatoes are cooking, melt the butter in a small saucepan over low heat. Stir in the minced garlic and cook for 1-2 minutes, just until fragrant. Do not let the garlic brown. Remove from heat and set aside.
