Ingredients

  • 1 cup All-purpose flour
  • 0.5 cup Whole wheat flour
  • 1.5 teaspoons Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Unsalted butter, softened
  • 0.5 cup Unsweetened applesauce
  • 2 tablespoons Honey or maple syrup (optional, for babies over 1 year)
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 0.5 cup Milk (any type)
  • 8 ounces Cream cheese, softened
  • 0.5 cup Plain Greek yogurt
  • 1 tablespoon Maple syrup or honey (optional, for frosting)
  • 0.5 teaspoon Vanilla extract (for frosting)

Directions

Step 1

Preheat the oven to 350°F (175°C). Grease two 6-inch round cake pans and line the bottoms with parchment paper for easy removal.

Step 2

In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, and salt. Set aside.

Step 3

Using a hand or stand mixer, cream the softened butter until light and fluffy. Add the applesauce and mix until combined.

Step 4

Beat in the eggs one at a time, followed by the vanilla extract. If using honey or maple syrup, add it now and mix well.

Step 5

Alternate adding the dry ingredients and milk to the wet mixture, starting and ending with the dry ingredients. Mix just until combined; do not overmix.

Step 6

Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.

Step 7

Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

Step 8

To make the frosting, beat the cream cheese and Greek yogurt together until smooth and creamy. Add the maple syrup or honey (if desired) and vanilla extract, and mix until well combined.

Step 9

Once the cakes are completely cool, spread a layer of frosting on top of one cake layer. Place the second cake layer on top, then spread the remaining frosting evenly over the top and sides of the cake.

Step 10

Decorate with fresh fruit or sprinkles, if desired. Keep refrigerated until ready to serve.
