Ingredients

  • 2 pounds Roma tomatoes
  • 4 tablespoons Extra virgin olive oil
  • 6 whole Garlic cloves
  • 4 sprigs Fresh thyme
  • 0.5 cup Fresh basil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Sugar
  • 0.25 teaspoon Red pepper flakes (optional)

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

Wash the Roma tomatoes and cut them in half lengthwise. Remove the cores and place the tomatoes cut-side up on a large baking sheet lined with parchment paper.

Step 3

Drizzle the tomatoes with 2 tablespoons of olive oil and sprinkle with salt, black pepper, and sugar. Optionally, sprinkle red pepper flakes for a hint of heat.

Step 4

Scatter the whole garlic cloves and thyme sprigs evenly around the tomatoes.

Place the baking sheet in the oven and roast for 2 hours, or until the tomatoes are soft, caramelized, and slightly shriveled.
