  • 3 pieces celery stalks (cut into 2-inch chunks)
  • 2 cups beef stock
  • 1 cup red wine (optional)

Directions

Step 1

Preheat your oven to 275°F (135°C).

Step 2

Pat the beef roast dry with paper towels to ensure a good sear. Season generously with kosher salt and black pepper on all sides.
