  • 6 cups vegetable broth
  • 2 bay leaves
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups baby spinach
  • 2 tablespoons chopped fresh parsley (optional)

Directions

Step 1

Heat olive oil in a large skillet over medium heat. Add diced onion, sliced carrots, and sliced celery. Cook for 4-5 minutes until softened, stirring occasionally.
