  • 3 Celery stalks, sliced
  • 2 large Russet potatoes, peeled and diced
  • 1 15-ounce can Canned diced tomatoes (with juices)
  • 6 cups Beef broth
  • 2 Bay leaves
  • 1 teaspoons Dried thyme
  • 1.5 cups Frozen green beans
  • 1 cup Frozen corn kernels
  • 2 tablespoons Chopped parsley (for garnish, optional)

Directions

Step 1

Season the beef stew meat with salt and black pepper.

Step 2

Heat olive oil in a large skillet over medium-high heat. Sear the beef in batches until browned on all sides. Transfer the browned beef to the slow cooker.

In the same skillet, sauté the diced onion for 3-4 minutes until translucent, then add the minced garlic and cook for an additional 30 seconds. Transfer the onion and garlic mixture to the slow cooker.
