Ingredients

  • 4 pieces (about 6 ounces each) beef round steaks
  • 0.5 cups all-purpose flour
  • 1 teaspoons salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons vegetable oil
  • 1 large, thinly sliced yellow onion
  • 2 minced garlic cloves
  • 2.5 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1.5 pounds baby potatoes
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Directions

Step 1

Season the beef round steaks on both sides with salt and black pepper.

Step 2

Place the flour in a shallow dish and dredge each steak in the flour, coating both sides. Shake off any excess flour.

Step 3

Heat the vegetable oil in a large skillet over medium-high heat. Sear the steaks for 2-3 minutes on each side until browned but not cooked through. Transfer the seared steaks to the slow cooker.

Step 4

In the same skillet, reduce the heat to medium. Add the sliced onion and garlic, cooking for 2-3 minutes until fragrant and softened. Transfer them to the slow cooker on top of the steaks.

Step 5

In a medium bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, and dried thyme. Pour this mixture over the steaks and onions in the slow cooker.

Step 6

Add the baby potatoes to the slow cooker, spreading them around the steaks and submerging them slightly in the liquid.

Step 7

Cover the slow cooker and cook on LOW for 6-7 hours, or until the steaks are tender and the potatoes are fully cooked.

Step 8

After cooking, carefully remove the steaks and potatoes from the slow cooker and place them on a serving platter. Cover with foil to keep warm.

Step 9

To thicken the gravy, mix the cornstarch and water in a small bowl to create a slurry. Stir the slurry into the liquid in the slow cooker. Turn the slow cooker to HIGH and cook for 5-10 minutes, stirring occasionally, until the gravy thickens.

Step 10

Pour the thickened gravy over the steaks and potatoes. Serve hot and enjoy!
