  • 2 Celery stalks, diced
  • 2 Russet potatoes, peeled and cut into 1-inch cubes
  • 12 ounces Stout beer
  • 2 cups Chicken broth
  • 2 tablespoons Tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 Bay leaves
  • 4 Fresh thyme sprigs
  • 1 cup Frozen peas
  • 1 tablespoon All-purpose flour
  • 2 tablespoons Water
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Season the chicken thighs with salt and pepper on both sides.

Step 2

Heat olive oil in a large skillet over medium-high heat. Sear the chicken thighs for 2-3 minutes per side until golden brown. Transfer them to the slow cooker.

In the same skillet, add the diced onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for another minute. Transfer the mixture to the slow cooker.
