Ingredients

  • 1.5 pounds beef steak (chuck or sirloin), cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 1 large bell pepper (red, green, or a mix), diced
  • 28 ounces diced tomatoes (canned, with juices)
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 15 ounces kidney beans (canned, drained and rinsed)
  • 15 ounces black beans (canned, drained and rinsed)
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon paprika (smoked or regular)
  • 1 teaspoon oregano
  • 0.25 teaspoons cayenne pepper (optional, for heat)
  • 1 teaspoon salt
  • 0.5 teaspoons ground black pepper
  • 2 tablespoons fresh cilantro, chopped (for garnish, optional)

Directions

Step 1

Heat the olive oil in a large skillet over medium-high heat.

Step 2

Sear the cubed beef steak on all sides until browned, about 2-3 minutes per side. Work in batches if necessary. Transfer the browned steak to the slow cooker.

Step 3

In the same skillet, add the diced onion, minced garlic, and bell pepper. Sauté for 4-5 minutes until softened. Transfer the mixture to the slow cooker.

Step 4

Add the diced tomatoes (with their juices), tomato paste, and beef broth to the slow cooker. Stir to combine.

Step 5

Add the kidney beans and black beans to the slow cooker.

Step 6

Sprinkle the chili powder, cumin, paprika, oregano, salt, black pepper, and cayenne pepper (if using) evenly over the ingredients in the slow cooker. Gently stir to mix the spices throughout.

Step 7

Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the flavors have melded together.

Step 8

Taste and adjust the seasoning with additional salt or spices if needed.

Step 9

Serve the steak chili hot, garnished with chopped fresh cilantro, if desired.
