Ingredients

  • 2 pounds beef short ribs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 large yellow onion
  • 4 whole garlic cloves
  • 1 cup beef broth
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons tomato paste
  • 1 tablespoon brown sugar
  • 1 teaspoon Smoked paprika
  • 4 whole hamburger buns
  • 2 tablespoons butter
  • 1 cup coleslaw (optional)
  • 8 pieces pickle slices (optional)

Directions

Step 1

Season the beef short ribs with salt and black pepper on all sides.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Sear the short ribs on all sides until browned, about 2-3 minutes per side. Transfer the ribs to the slow cooker.

Step 3

Finely chop the yellow onion and mince the garlic cloves. Add them to the skillet and sauté for 2-3 minutes until softened and fragrant. Transfer to the slow cooker.

Step 4

In a small bowl, whisk together the beef broth, balsamic vinegar, tomato paste, brown sugar, and smoked paprika. Pour the mixture over the short ribs in the slow cooker.

Step 5

Cover and cook on low for 8 hours or on high for 4-5 hours until the short ribs are tender and easily fall apart.

Step 6

Remove the short ribs from the slow cooker and shred the meat with two forks, discarding any bones and excess fat. Return the shredded meat to the slow cooker and stir to coat evenly in the sauce.

Step 7

Butter the hamburger buns and toast them in a skillet or under a broiler until golden brown.

Step 8

Assemble the sandwiches by piling the shredded short rib meat onto the bottom half of the buns. Optionally, top with coleslaw and pickle slices for added flavor and crunch.

Step 9

Serve immediately and enjoy!
