Ingredients

  • 4 lbs Pork butt roast
  • 2 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Dried thyme
  • 2 tbsp Olive oil
  • 3 sprigs Fresh rosemary sprigs
  • 1 Yellow onion, diced
  • 4 cloves Fresh garlic cloves, minced
  • 14 oz Cranberry sauce (whole berry)
  • 1 cup Chicken broth
  • 2 tbsp Brown sugar
  • 1 tbsp Balsamic vinegar
  • 2 tbsp Cornstarch
  • 2 tbsp Water
  • 2 tbsp Fresh parsley, chopped (optional for garnish)

Directions

Step 1

Season the pork butt roast all over with salt, black pepper, garlic powder, onion powder, and dried thyme.

Step 2

Heat olive oil in a large skillet over medium-high heat. Sear the pork roast on all sides until golden brown, about 3-4 minutes per side. Set aside.

Step 3

In the slow cooker, arrange the diced onion and minced garlic on the bottom.

Step 4

Place the seared pork roast on top of the onion and garlic. Add the fresh rosemary sprigs around the pork.

Step 5

In a medium bowl, whisk together the cranberry sauce, chicken broth, brown sugar, and balsamic vinegar until well combined.

Step 6

Pour the cranberry mixture over the pork roast in the slow cooker.

Step 7

Cover and cook on low for 8 hours, or until the pork is tender and easily shreds with a fork.

Step 8

Once cooked, carefully remove the pork roast from the slow cooker and set aside on a serving platter. Tent with foil to keep warm.

Step 9

Strain the cooking liquids into a saucepan, discarding the solids, and bring the liquid to a simmer over medium heat.

Step 10

In a small bowl, mix the cornstarch and water to create a slurry. Gradually whisk the slurry into the simmering liquid and cook until the sauce thickens, about 2-3 minutes.

Step 11

Serve the pork roast with the thickened cranberry gravy drizzled over the top. Sprinkle with chopped parsley, if desired.
