Ingredients

  • 1 cup Medium-grain white rice
  • 4 cups Whole milk
  • 1 cup Heavy cream
  • 0.5 cup Granulated sugar
  • 2 tablespoons Unsalted butter
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 0.5 cup Raisins (optional)

Directions

Step 1

Rinse the rice under cold water until the water runs clear. This helps remove excess starch and keeps the pudding creamy but not clumpy.

Step 2

Add the rinsed rice, whole milk, heavy cream, granulated sugar, and unsalted butter to the slow cooker.

Step 3

Stir in the vanilla extract, ground cinnamon, and salt to evenly distribute the flavors.

Step 4

If you’re adding raisins, stir them in at this stage.

Step 5

Cover the slow cooker with the lid and cook on LOW for 4 hours, stirring halfway through to ensure the rice cooks evenly and doesn’t stick to the bottom.

Step 6

After 4 hours, check the pudding consistency. If it’s too thick, you can stir in extra milk (a few tablespoons at a time) to loosen it up.

Step 7

Turn off the slow cooker and let the pudding cool slightly. The pudding will thicken as it cools.

Step 8

Serve warm, at room temperature, or cold, garnished with an extra sprinkle of cinnamon if desired. Store leftovers in an airtight container in the refrigerator for up to 3 days.
