Ingredients

  • 15 oz Pumpkin puree
  • 14 oz Sweetened condensed milk
  • 12 oz Evaporated milk
  • 2 pcs Large eggs
  • 3 tbsp Granulated sugar
  • 1 tsp Vanilla extract
  • 2 tsp Pumpkin pie spice
  • 0.25 tsp Salt
  • 2 tbsp Unsalted butter (melted)
  • 0 as desired Whipped cream (optional, for serving)
  • 0 as desired Crushed gingersnap cookies (optional, for garnish)

Directions

Step 1

Grease the inside of your slow cooker lightly with non-stick cooking spray or melted butter to prevent sticking.

Step 2

In a large mixing bowl, combine the pumpkin puree, sweetened condensed milk, evaporated milk, eggs, granulated sugar, vanilla extract, pumpkin pie spice, and salt. Whisk together until smooth and creamy.

Step 3

Pour the pumpkin mixture into the greased slow cooker.

Step 4

Cover the slow cooker with the lid and set it to cook on low for 4 hours, or until the pudding is set and slightly firm in the center.

Step 5

Once the pudding is done, turn off the slow cooker and allow it to rest for about 15-20 minutes to cool slightly. The pudding will continue to firm up as it cools.

Step 6

Serve warm, spooned into individual bowls. Top with whipped cream and a sprinkle of crushed gingersnap cookies, if desired.

Step 7

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or enjoy chilled.
