  • 4 pieces Veal shanks
  • 0.5 cups All-purpose flour
  • 1 teaspoons Salt
  • 1 teaspoons Black pepper
  • 2 tablespoons Olive oil
  • 1 large Onion, diced
  • 2 medium Carrots, diced
  • 2 stalks Celery, diced
  • 4 cloves Garlic cloves, minced
  • 28 ounces Canned crushed tomatoes
  • 1 cup Beef broth
  • 0.5 cups Dry white wine
  • 1 leaf Bay leaf
  • 4 sprigs Fresh thyme sprigs
  • 2 tablespoons Fresh parsley, chopped (optional)
  • 1 teaspoon Lemon zest (optional)

Directions

Step 1

Pat the veal shanks dry with paper towels and season them with salt and black pepper on both sides.

Step 2

Dredge each veal shank in the flour, shaking off the excess.

Step 3

Heat olive oil in a large skillet over medium-high heat. Sear the veal shanks on both sides until golden brown, about 2-3 minutes per side, then transfer to the slow cooker.

In the same skillet, add the diced onion, carrots, and celery. Sauté for 3-4 minutes until softened.
