Ingredients

  • 1.5 lbs Lean ground turkey or lean ground beef
  • 1 large Egg
  • 0.5 cups Oats (quick-cooking or rolled)
  • 0.25 cups Milk (low-fat or dairy-free alternative)
  • 0.5 cups Onion (finely chopped)
  • 0.5 cups Carrot (finely grated)
  • 2 cloves Garlic (minced)
  • 1 tbsp Worcestershire sauce
  • 0.25 cups Ketchup (low-sugar or homemade)
  • 1 tsp Dried parsley
  • 1 tsp Dried oregano
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 cups Ketchup (for topping)

Directions

Step 1

In a large mixing bowl, combine lean ground turkey or beef, egg, oats, milk, chopped onion, grated carrot, and minced garlic.

Step 2

Add Worcestershire sauce, 1/4 cup ketchup, dried parsley, dried oregano, salt, and black pepper to the mixture.

Step 3

Mix thoroughly using clean hands or a spatula until all ingredients are evenly incorporated, being careful not to overmix.

Step 4

Shape the meat mixture into a loaf shape that will fit into your slow cooker. Line the bottom of the slow cooker with a piece of parchment paper to prevent sticking.

Step 5

Place the meatloaf into the slow cooker and spread 1/2 cup ketchup evenly over the top of the loaf as a glaze.

Step 6

Cover the slow cooker with the lid and set it to low heat. Cook for 4.5 to 5 hours, or until the internal temperature of the meatloaf reaches 165°F (74°C) when measured with a meat thermometer.

Step 7

Once cooked, carefully remove the meatloaf using the parchment paper as a sling. Allow it to rest for 5-10 minutes before slicing.

Step 8

Serve warm with a side of steamed vegetables, mashed potatoes, or a simple salad for a healthy, balanced meal.
