Ingredients

  • 6 pieces Boneless, skinless chicken thighs
  • 2 large Sweet potatoes
  • 1 can (15 oz) Black beans
  • 1 can (14.5 oz) Diced tomatoes with green chilies
  • 1 large Red bell pepper
  • 1 medium Yellow onion
  • 3 large Garlic cloves
  • 2 teaspoons Ground cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Ground coriander
  • 1 teaspoon Dried oregano
  • 1 cup Chicken broth
  • 1 tablespoon Olive oil
  • 1.5 teaspoons Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Fresh cilantro (optional, for garnish)
  • 2 pieces Lime wedges (optional, for serving)

Directions

Step 1

Peel and cube the sweet potatoes into bite-sized chunks. Roughly chop the red bell pepper and yellow onion. Mince the garlic cloves.

Rinse and drain the black beans. Set aside.

Step 3

In a bowl, mix together the ground cumin, smoked paprika, ground coriander, dried oregano, salt, and black pepper.

Rub the chicken thighs with the spice mix, ensuring they are evenly coated.

Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the sweet potatoes are tender and the chicken is fully cooked and tender.

Before serving, taste and adjust seasoning if necessary. Optionally, garnish with chopped fresh cilantro.
