  • 3 cups beef broth
  • 1 teaspoon caraway seeds
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 0.5 cup sour cream
  • 2 tablespoons fresh parsley

Directions

Step 1

Cut the beef chuck roast into 1-inch cubes. Pat the cubes dry with paper towels to ensure they brown properly.

Step 2

Peel and dice the onions and carrots. Deseed and dice the red bell pepper. Mince the garlic cloves.

Step 3

Heat a large skillet over medium-high heat and add 2 tablespoons of vegetable oil. Working in batches, sear the beef cubes on all sides until browned and transfer them to the slow cooker.
