Ingredients

  • 2 pounds beef stew meat

  • 3 cloves garlic cloves, minced
  • 3 medium carrots, peeled and sliced
  • 2 stalks celery stalks, sliced
  • 3 medium potatoes, peeled and cubed
  • 1 can (14.5 ounces) crushed tomatoes
  • 2 cups beef broth
  • 1 bay leaf
  • 2 tablespoons chopped fresh parsley (for garnish)

Directions

Step 1

In a large zip-top bag, combine the flour, paprika, salt, and black pepper.

Add the beef stew meat to the bag, seal, and shake until the meat is evenly coated.

Heat the olive oil in a large skillet over medium-high heat. Add the coated beef in batches, searing until browned on all sides. Transfer the browned beef to the slow cooker.
