Ingredients

  • 1 pound dried black-eyed peas
  • 12 ounces smoked sausage, sliced
  • 1 large onion, diced
  • 1 medium green bell pepper, diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon thyme, dried
  • 1 tablespoon cajun seasoning
  • 4 cups chicken broth
  • 2 cups water
  • 1.5 cups long-grain white rice, uncooked
  • 0.25 cup green onions, sliced (optional for garnish)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Rinse and sort the dried black-eyed peas, removing any debris or damaged peas.

Step 2

In a large skillet over medium heat, sauté the sliced smoked sausage until browned on both sides. Remove the sausage from the skillet and set aside.

Step 3

In the same skillet, add the diced onion, green bell pepper, and celery. Cook for 4-5 minutes, stirring occasionally, until softened.

Step 4

Add the minced garlic to the skillet and cook for an additional 1 minute until fragrant.

Step 5

Transfer the sautéed vegetables, browned sausage, rinsed black-eyed peas, bay leaf, thyme, and cajun seasoning to the slow cooker.

Step 6

Pour in the chicken broth and water, then stir to combine.

Step 7

Cover the slow cooker and cook on low for 6-7 hours, or until the black-eyed peas are tender. Stir occasionally, if possible.

Step 8

About 30 minutes before serving, stir in the uncooked rice, salt, and black pepper. Replace the slow cooker lid and allow the rice to cook fully in the broth (this usually takes about 25-30 minutes).

Step 9

Once the rice is tender and the mixture has thickened, remove the bay leaf and stir in additional seasoning if needed.

Step 10

Serve hot, garnished with sliced green onions if desired.
