  • 2 pounds Beef chuck roast
  • 1 large Yellow onion
  • 4 medium Carrots
  • 4 medium Russet potatoes
  • 3 Celery stalks
  • 3 Garlic cloves
  • 4 cups Beef broth
  • 2 tablespoons Tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon Fresh thyme
  • 1 teaspoon Fresh rosemary
  • 1 Bay leaf
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 cup All-purpose flour

Directions

Step 1

Cut the beef chuck roast into 1- to 1.5-inch cubes. Pat the beef dry and lightly season with salt and pepper.

Step 2

Place the all-purpose flour into a shallow dish and dredge each piece of beef in the flour, shaking off any excess.

Step 3

Heat olive oil in a large skillet over medium-high heat. Sear the floured beef cubes in batches until browned on all sides, about 2 minutes per side. Transfer the browned beef to the slow cooker.

Peel and chop the onion into medium dice. Peel and slice the carrots into thick rounds. Cut the potatoes into bite-sized cubes, and dice the celery stalks. Mince the garlic cloves.
